The lazy genius way to never stress about dinner again 💡


Hi, Reader,

So it's been a couple days of roughing it without water, my husband trying to deal with the same at the apartment building, and the kids being out of school.

But you know we still have to eat (even if we can't wash dishes easily—melting snow like the Ingalls family! 😂)

Since I've been able to use food out of the freezer to get food on the table quickly and easily with minimal cleanup, I thought it's a perfect time to share the tip that honestly makes the biggest difference on our busiest nights: freezer meals.

Your freezer is the ultimate meal prep tool. When you stock it with ready-to-cook (or ready-to-reheat) meals, you’re basically giving your future self the gift of a home-cooked dinner with zero effort on the day you need it most.

Being without water counts as one of those times! 🤪

Here’s how to get started with freezer meal prep:

✅ Double and freeze. The next time you make lasagna, chili, enchiladas, or soup — make two. Eat one now, freeze one for later. This is the simplest way to build a freezer stash without extra work.

✅ Prep dump-and-go slow cooker bags. Toss raw protein plus sauce, seasonings, and veggies into a freezer bag. Label it, lay it flat to freeze, and when you’re ready, dump it into the slow cooker in the morning. Dinner is done when you walk in the door.

✅ Freeze your breakfast staples. Waffles, pancakes, muffins, and breakfast burritos all freeze like a dream. Make a big batch on the weekend and pull them out for quick breakfasts all month.

✅ Don’t forget the basics. Cooked rice, beans, shredded chicken, browned ground beef, and even homemade broth all freeze perfectly. Having these building blocks in the freezer means you can throw together a meal in minutes.

A well-stocked freezer is truly a game changer for busy families. And if you pair it with a solid meal plan, you’ll never be stuck wondering what’s for dinner again.
